The science behind the food of the next century.
A food science consultancy advancing fermentation-based R&D for better plant proteins and nutraceuticals — turning rigorous science into products that reach the market and stay there.

Deflavoring plant protein at its source.
Beany, grassy, and earthy off-flavors — not price alone — are the barrier keeping plant proteins from displacing animal protein at scale. Instead of masking them downstream, we use solid-state fermentation to biologically improve the protein ingredient before it is ever extracted.
In preliminary screening, 2-pentylfuran — an off-flavor compound that resists conventional processing — fell ~84% under koji fermentation and dropped below the detection threshold entirely under direct lactic fermentation.

A unique source of natural strains
Our deflavoring cultures come from a distinctive, proprietary source — molds and lactic acid bacteria isolated from centuries-old traditional legume fermentations such as soy sauce koji, douchi, dajiang, natto, and suan doujiao. These wild strains are naturally adapted to legume substrates, giving us a strain library that off-the-shelf dairy starters cannot match.
Two fermentation routes, compared head to head
Direct high-moisture lactic fermentation and a sequential koji-then-lactic route are optimized under matched conditions across defatted soybean meal, yellow pea, and faba bean — then integrated with conventional alkaline extraction with no change to downstream processing.
Measured in what people actually taste
Deflavoring is quantified by odor activity value and trained descriptive panels, not raw peak area — and validated in real extruded meat analogs and protein beverages, closing the gap between lab readings and finished products.

Rigor at every step from concept to shelf.
Great food products are not lucky guesses. Ours is a disciplined, evidence-led process that turns ambition into something you can manufacture, defend, and invest in.
- 01
Discover & screen
We isolate and characterize functional microorganisms, then rank candidates by perceptual impact — not raw instrument peaks — before anything advances.
- 02
Develop & optimize
In the lab we tune fermentation and formulation under matched conditions, integrating with conventional processing so nothing downstream has to change.
- 03
Validate & scale
We confirm results in real finished formulations, demonstrate on commercial equipment, and back every claim with a techno-economic case investors can trust.

From active ingredient to finished dosage form.
Our key personnel have helped companies take nutraceutical products from concept to market across every major delivery format — solving the formulation, stability, and manufacturing problems that decide whether a supplement actually ships.
- Gummies
- Softgels
- Two-piece capsules
- Powders & sachets
We work through active loading, masking and mouthfeel, encapsulation chemistry, shelf-life stability, and scale-up — the same bench-to-plant discipline we bring to every program.

Scientists, technologists, and operators under one roof.
Future Food Technologies is a food science consultancy built around a conviction: the biggest challenges in food are solved by people who understand the microbiology, the process engineering, and the economics all at once. Our team pairs PhD scientists with operators who have carried research to full-scale manufacturing.
Our focus is R&D and process scale-up — moving proven science out of the lab and into robust, manufacturable processes. We work as an embedded partner, in the lab and on the plant floor until the work is done and the evidence is indisputable.
Let's build the future of food together.
Whether you're developing a product, scaling a company, or evaluating an investment, we'd love to hear what you're working on.
